We present a home-style take on a drink featured on the seasonal menu. Designed as a large-volume premix which is packed with the tastes of the festive period, which makes it perfect for your holiday party. Reserve the remaining syrup to use in breakfast cocktails, puddings, or for additional servings of the drink.

Ingredients for the Clementine Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
To make the Cocktail (makes 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Directions
Making the Cordial: Place all the components into a pan, bring to a simmer, stirring until the sugar dissolves. Next, take off the burner allowing it to cool down completely. Transfer into an sealable bottle, seal and store chilled, it can be stored for up to four weeks.
Preparing the Batch Mix: Pour all the liquid ingredients into a big jug, leave to sit for one hour, then strain best through cheesecloth, to ensure it's perfectly clear.
When ready to serve: Add 85ml from the cocktail base to a stirring glass packed with ice, and stir carefully for about 60 seconds until cold. Pour into an chilled martini glass or equivalent, top with some cranberries and complete it by giving it a brief mist of mandarin oil over the drink.
